Cocoa Cookie Balls

If you have a sweet tooth, yet don’t want to waste your calories on sugar loaded junk food, Cocoa Cookie Balls will satisfy! These soft, chewy bites are so good the kids will be begging for you to make them. And the best part is, they are healthy!
Wet Ingredients:
- 1 cup Agave
- 1/2 cup Raw, Organic or Coconut Milk
- 1/2 cup Cocoa
- 1 tsp pure vanilla extract
- 1/2 cup Coconut Oil
- 1/2 cup Almond Butter or Peanut Butter
Dry Ingredients:
- 2 cups Oats **(see below for variation)
- 1 cup Shaklee Protein **
- 2 Tbsp. Flax Meal or Flax Seeds
- 1/2 cup Coconut (Optional)
- 1/2 cup Nuts (Optional)
In a bowl mix oats, protein, coconut, nuts together. Set aside. Bring Agave, Milk, and Cocoa, and vanilla to a boil in a saucepan. Reduce heat quickly so as not to boil over. Keep on low heat and add in coconut oil and peanut butter or almond butter. Combine the wet mixture into the dry mixture. Consistency will be like cookie dough. Roll into balls and refrigerate. To simplify, you can press into a 13 x 9 inch pan and cut into squares.
Variation:
** The oats make the recipe simple if you are in a hurry, but here is an even healthier option in place of the above Dry Ingredients:
- 1 cup oats
- 1 cup Shaklee protein
- 1 cup Almonds, ground (2/3 cup whole, raw almonds will make 1 cup ground. I put them in my Vita Mix and grind them up. You can omit oats all together by adding 2 cups of almonds)
- 1/2 Cup coconut
- 1/2 cup nuts
- Add ins: Chocolate chips, raisins, dates
** You can use any flavor of Shaklee protein for these cookies. So buy your favorite, use it in this recipe, and then use the rest for your morning shake. It’s a win-win! Choose from Energyzing Soy Protein or Cinch Inch Loss Protein.

I made the recipe Cara has last week for the football game… it didn’t have as many ingredients and they were AMAZING!!!!!! I want to try this one too with all the extra coconut – I LOVE coconut!
